The Good Recipe: Almondigas Soup
Need something hearty and light? Try this Almondigas soup using The Good Meat Ground Pork.
INGREDIENTS
- 250g The Good Meat Ground Pork
- 1/2 cup cabbage, finely chopped, squeezed of water
- 1/2 medium red onion, peeled, finely chopped
- 1/2 medium egg, beaten
- 2 tablespoons cooking oil
- 1/2 medium red onion peeled, sliced
- 5 cloves Garlic peeled, sliced
- 1 liter (4 cups) water
- 1 piece chicken bouillon cube
- 1 bundle misua (fine rice noodles)
- Salt
- Ground black pepper (add more to taste)
PROCEDURE
- Combine The Good Meat ground pork, finely chopped cabbage, onion, and egg in a bowl. Add salt and pepper to taste.
- Scoop and form into meatballs using a spoon. Make around 12 meatballs.
- Over medium-low heat, add oil in a soup pot. Saute sliced onion until translucent. Add garlic and cook until light brown.
- Pour a liter of water, add chicken bouillon cube to taste. Bring it to a boil.
- Add the meatbolls into the soup. Bring to a boil and let it simmer until meat is cooked through. Remove scum that may rise to the surface of the broth.
- Add misua into the broth. Cook until softened.
- Serve in a bowl while hot. Optional: Garnish with chopped spring onions or fried garlic.
