The Good Recipe: Almondigas Soup

Need something hearty and light? Try this Almondigas soup using The Good Meat Ground Pork.

INGREDIENTS

  • 250g The Good Meat Ground Pork
  • 1/2 cup cabbage, finely chopped, squeezed of water
  • 1/2 medium red onion, peeled, finely chopped
  • 1/2 medium egg, beaten
  • 2 tablespoons cooking oil
  • 1/2 medium red onion peeled, sliced
  • 5 cloves Garlic peeled, sliced
  • 1 liter (4 cups) water
  • 1 piece chicken bouillon cube
  • 1 bundle misua (fine rice noodles)
  • Salt
  • Ground black pepper (add more to taste)

PROCEDURE

  1. Combine The Good Meat ground pork, finely chopped cabbage, onion, and egg in a bowl. Add salt and pepper to taste.
  2. Scoop and form into meatballs using a spoon. Make around 12 meatballs.
  3. Over medium-low heat, add oil in a soup pot. Saute sliced onion until translucent. Add garlic and cook until light brown. 

  4. Pour a liter of water, add chicken bouillon cube to taste. Bring it to a boil.
  5. Add the meatbolls into the soup. Bring to a boil and let it simmer until meat is cooked through. Remove scum that may rise to the surface of the broth.
  6. Add misua into the broth. Cook until softened.
  7. Serve in a bowl while hot. Optional: Garnish with chopped spring onions or fried garlic.
