The beauty of this dish is its simplicity. The dory fillets are baked in foil or parchment paper along with a classic, irresistible sauce that is created by the heat of the oven:

Instructions

  1. Preheat oven to 200°C
  2. In a baking dish, place the cream dory evenly, not too crammed. Add salt and pepper to both sides.
  3. In a bowl, add butter, cream, garlic, mustard, lemon juice, salt and pepper. Heat in the oven until melted and smooth.
  4. Top the fish with some finely chopped spring onion, then add the sauce.
  5. Bake in the oven for 10 – 12 minutes, or until the fish is just cooked.
  6. From the oven, transfer to a bigger plate. Spoon over sauce, and top with parsley and lemon wedges if desired
