Instructions

Step 1: Marinate the Beef

  1. In a bowl, combine soy sauce, brown sugar, grated pear, sesame oil, minced garlic, and ginger.

  2. Add the thinly sliced beef and toss well to coat.

  3. Let it marinate for at least 15–20 minutes (or overnight in the fridge for maximum flavor).

Step 2: Prepare the Soft-Boiled Egg & Bok Choy

  1. Bring a small pot of water to a boil.

  2. Gently lower the egg into the water and boil for 6 minutes and 30 seconds for a jammy yolk. Transfer immediately to an ice bath, peel, and slice in half. Season with black pepper and chili flakes.

  3. In the same boiling water, blanch the halved baby bok choy for 1–2 minutes until tender-crisp. Drain and set aside.

Step 3: Make the Garlic Rice

  1. Heat 1 tbsp oil in a skillet over medium-low heat. Add the chopped garlic and cook slowly until golden brown and crispy (do not burn).

  2. Toss in the cooked rice and a pinch of salt. Stir-fry for 2–3 minutes until heated through and well incorporated. Divide the rice into serving bowls.

Step 4: Cook the Beef Bulgogi

  1. Heat a skillet or wok over high heat.

  2. Add the marinated beef in a single layer (cook in batches if needed so it sears instead of steams).

  3. Cook quickly for 2–3 minutes, tossing constantly until caramelized and cooked through.

Assembly

  1. Base each bowl with a generous portion of garlic rice.

  2. Arrange the cooked beef bulgogi on top of the rice.

  3. Place the blanched bok choy, chopped kimchi, and half of the soft-boiled egg around the bowl.

  4. Sprinkle toasted sesame seeds over the beef and chopped green onions over the entire bowl. Enjoy hot!

Chef Gigi’s Tips:

  • The Pear Trick: Don’t skip the grated Asian pear (or apple/kiwi). It contains natural enzymes that break down tough meat fibers, giving bulgogi its signature melt-in-your-mouth tenderness.

  • Get That Sear: Use a ripping-hot cast-iron skillet or wok, and avoid overcrowding the pan. High heat caramelizes the sugars in the marinade quickly, giving you those delicious smoky, charred edges without overcooking the meat.

  • Perfect Jammy Egg: Place your egg straight from the fridge into rapidly boiling water for 6 minutes, 30 seconds, then immediately plunge it into ice water. This halts the cooking process and guarantees that gooey, golden yolk.

  • Crispy Garlic Oil: When making the garlic rice, start the minced garlic in cold oil over medium-low heat. Letting it slowly warm up infuses the oil with deep garlic flavor and prevents the garlic from turning bitter or burnt.
